Aperol and Red Grapefruit Cocktail

Ingredients
Crushed ice
360ml Aperol
10 red or pink grapefruit, juiced and strained
1 bottle (750ml) sparkling wine
Lime slices, to garnish
Method
- Fill 6 martini glasses or tall tumblers with crushed ice, add ΒΌ cup (60ml) of Aperol to each and divide the grapefruit juice evenly between them.
- Top up with sparkling wine, add a slice of lime to garnish and serve immediately.
Lyndeyβs Note:Β When pink or red grapefruit are not in season, tinned juice can be substituted.
