Mother’s Day is almost on us and while there is a lot of commercialisation which goes on with it, let’s not worry about that. It’s all about celebrating your own Mum and taking joy in being a mother if you are lucky enough to be one. For me it is bitter sweet with having lost my son 5 years ago and my beautiful daughter, Lucy living in London. But the good news is I will see her soon and I have such close and fond memories of my son Blair and my mother Isabel.
What is important is not buying expensive gifts. it is a moment to stop and reflect on the role of Mothers in our lives. and not only biological mothers but the many wonderful mad “Aunties” and “Uncles” who are also wonderful role models  though they may not have children of their own. In this I include “godparents” though a young friend of mine recently termed the phrase “guide parent” which I love. I salute you.

What mother doesn’t want some cookware for Mother’s Day. I have just released my every own Baking Range. Forget the silicon of years gone by. Surprise Breakfast in Bed Recipe!
Perfect omeletteÂ
Serves 1
Preparation time 5 minutes
Cooking time 5 minutes
1 teaspoon butter
3 eggs
salt and freshly ground pepper
50g ham, shredded
1 – 2 tablespoons grated Swiss cheese
Place 25cm frying pan over medium-high heat and melt butter. Meanwhile whisk together eggs with salt, pepper and 1 tablespoon water (optional) to lighten the omelette.
When the butter has foamed and is golden, pour in the eggs which should sizzle. Let them coagulate for around 10 seconds. With the back, flat side of a fork push the eggs in from the sides of the pan into the centre, in a circular motion.
Tilt the pan if necessary to that the uncooked egg spreads underneath. After a minute or two the eggs will be more than half set, so leave flat on the cooktop and sprinkle middle with ham and cheese.
Fold over so you have a half moon shape and cook for 30 seconds more. Flip over omelette for another 30 seconds and then serve immediately.
Lyndey’s note: it is ideal if you have a special pan for crepes, pancakes and omelettes. A non-stick pan is an excellent choice.
