Parmesan Polenta Chicken Strips

Forget chicken nuggets. These parmesan polenta chicken strips are more delicious, healthier and so simple to cook. Serves four people.

Ingredients

  • 1/3 cup polenta
  • 1/3 cup very finely grated Australian parmesan or Romano cheese
  • 4 chicken fillets, cut into strips or chicken tenderloins (800g)
  • Plastic bag
  • Thai sweet chilli sauce to serve

Instructions

  1. Pre–heat oven to 200°C (180°C fan forced).
  2. Combine Polenta and Parmesan cheese together.  Toss the chicken pieces in Parmesan Polenta in a plastic bag.
  3. Place onto a baking paper lined tray and bake at 200°C for 10 minutes or until cooked and golden.
  4. Serve the parmesan polenta chicken strips with Thai sweet chilli sauce.

Notes

Lyndey’s Note: Substitute flattened chicken breast, veal or beef for schnitzel, or seafood. Shredded Parmesan and Romano cheese can be frozen in an airtight container for up to 1 month.
