Aperol and Red Grapefruit Cocktail

Serves: 6
Preparation: 10 minutes

Ingredients

Crushed ice
360ml Aperol
10 red or pink grapefruit, juiced and strained
1 bottle (750ml) sparkling wine
Lime slices, to garnish

Method

  1. Fill 6 martini glasses or tall tumblers with crushed ice, add ΒΌ cup (60ml) of Aperol to each and divide the grapefruit juice evenly between them.
  2. Top up with sparkling wine, add a slice of lime to garnish and serve immediately.

Lyndey’s Note:Β When pink or red grapefruit are not in season, tinned juice can be substituted.
