Corn Fritters with Avocado and Ham

Corn Fritters with Avocado and Ham are something to please all ages and a great way to get the kids in the kitchen.

Ingredients

  • 1 cup (160g) roasted macadamia or other nuts, (optional)
  • 3 cups corn kernels (ready prepared or from 3 large cobs)
  • 2 eggs
  • 1/4 cup coriander leaves and some stems, finely chopped (optional)
  • Salt to taste
  • 1 cup (150g) plain flour
  • 1 tsp baking powder
  • ¼ cup (60 ml) extra virgin olive oil or macadamia oil
  • 1 large (or 2 small) ripe avocado, stone removed and diced
  • Thin slices ham
  • Hot sauce (optional for adults)

Instructions

  1. Blitz nuts in a food processor if using until finely chopped. Set aside.
  2. Place half corn kernels in a food processor with eggs, coriander (if using), salt, flour and baking powder and whiz until well combined and corn is processed. Pour into a bowl and mix with remaining whole kernels and macadamia nuts if using. Don’t overmix and thin if necessary with a little milk.
  3. Heat one tablespoon oil in a large, heavy-based frying pan over medium high heat. Pour heaped tablespoons of the batter onto the pan; using spatula, spread batter into rounds. Reduce heat to medium. Cook for a minute or two on each side until golden and just set, and bubbles begin to appear on surface; remove from pan; cover to keep warm (or place in a 100’C oven). Repeat with remaining batter.
  4. Serve topped with avocado chunks and ham. Adults may enjoy some hot sauce too. Store in a sealed container in the fridge for up to two days.
