Kids Mac‘n Cheese

Mac’n Cheese is a perennial favourite with all ages. This Kids Mac’n Cheese is adaptable for children’s individual tastes.

Ingredients

  • 200 g uncooked pasta (macaroni, penne, spirals etc)
  • 160 g vegetables e.g. broccoli florets, carrot sticks
  • 60 g butter
  • ¼ cup (35 g) plain flour
  • 1 medium onion, finely diced (optional)
  • 2 rashers streaky bacon, diced or slices ham
  • 500 – 600 ml milk, warmed
  • 1 – 3 teaspoons Dijon or grain mustard (according to taste)
  • 2/3 cup (80 g) grated cheddar cheese
  • ¼ cup stale or Panko breadcrumbs (optional)

Instructions

  1. Pre-heat oven to 180’C. Cook the pasta in plenty of salted boiling water as per the packet directions, drain and set aside Steam vegetables until tender and set aside. Chop if they are going in the cheese sauce.
  2. Heat 2 tablespoons (40 g) butter in a small pan and cook onion (if using) and bacon until bacon is soft and translucent but not brown. There is no need to precook the ham in which case just melt the butter.
  3. Add the flour and cook for around 2minutes, stirring constantly. Gradually whisk in 2 cups (500 ml) warm milk. Bring the sauce just to the boil, whisking constantly, then reduce the heat and cook for a minute more. Add remaining milk if it is too thick. Stir in mustard, ¾  grated cheese and vegetables (or keep separate). Stir in pasta and pour into a greased oven proof dish. Top with remaining grated cheese and breadcrumbs (if using). Dot with remaining butter.
  4. Bake for 20 – 30 mins or until the cheese on top is melted, bubbling and golden

Notes

Lyndey’s Notes: For picky eaters the vegetables can be pureed and put in the sauce. Leftovers can be stored in the fridge for up to 3 days. It can also be frozen (in kid-sized portions) and reheated in the microwave. Don’t use bacon or ham for vegetarians, and you can also add diced chicken. Adults might like to season with salt and freshly ground black pepper.
