Kofta Kebab or Lamb Mince Skewers

Kofta kebab or Lamb Mince Skewers are traditionally made with grated onion – but that hurts my eyes. You’ll love the ease of this food processor method! You will need 14 or so flat metal skewers. Alternatively you could roll the mixture into sausage or rissole shapes and pop on the BBQ as is.

Ingredients

  • 1 Bunch Parsley
  • Leaves from 6 sprigs mint
  • 1 large onion, roughly chopped
  • 3 garlic cloves
  • 1 teaspoon cinnamon
  • ½ teaspoon allspice
  • generous pinch cayenne
  • 750g lamb mince
  • Extra virgin olive oil to brush

Instructions

  1. Remove most of stems from parsley and discard. Place parsley and mint leaves in food processor and process until chopped. Add all remaining ingredients except lamb and oil. Whizz again and when onion is very finely chopped, add lamb and season to taste generously, with salt and freshly ground pepper. Process again until well mixed.
  2. Preheat a barbecue or chargrill on high. Use wetted hands to roll handfuls of mixture into a sausage shape about 12cm long and then squeeze around skewer so it doesn’t slide around.
  3. Brush or spray mince with oil and grill or barbecue for 5-8 mins, turning halfway through cooking. Take care not to overcook or it will by dry and reduce heat if they are browning too quickly.

Notes

Lyndey’s Note:  If you can’t find lamb mince, you could use beef mince
