Ingredients:
2 tablespoons (40ml) macadamia oil
ΒΌ cup (40g) raw macadamia nuts, halved or roughly chopped
2/3 cup (120g) rolled oats (not quick-cooking oats)
1 tablespoon sunflower seeds
1 tablespoon real maple syrup or honey
1/3 teaspoon natural vanilla extract
1/3 cup mixed dried or glace fruit, or to taste
2 tablespoons pepitas
Sweet mixed spice
1/3 teaspoon ground cinnamon
Pinch ground nutmeg
Pinch ground ginger
Pinch ground cloves
Pinch ground cardamom seeds
To serve
Tropical fruit
Thick Greek style yoghurt
For the sweet mixed spice: Combine all ingredients in a small bowl.
- Place one tablespoon oil into a pan over medium heat. Toss the macadamias with the sweet mixed spice, then add to the pan and cook, stirring frequently for 10 or until the nuts are golden. Set aside to cool.
- Meanwhile combine rolled oats, sunflower seeds, maple syrup and vanilla extract in a bowl and mix well. Heat remaining oil and cook this mixture, stirring constantly until lightly golden. Set aside to cool.
- Combine the cooled oats mixture, macadamias and remaining ingredients in a bowl. Mix well and store in an airtight
- Serve with tropical fruit, Greek yoghurt and a great cup of coffee.
Lyndeyβs Note: Real maple syrup is a much superior product to imitation maple syrup.
*Note: Australian measurements 1 tablespoon = 20ml are used throughout.
