Everyone loves a brownie but I wanted the honey to be the hero, so I made luscious honey blondies when I cooked this at the historic Beekeeper’s Inn near Orange.
Makes: 24 bars
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Ingredients
125g butter
100g white chocolate, broken into pieces
½ cup (110g) brown sugar
¼ cup (90g) honey
1 teaspoon vanilla bean paste
2/3 cup (100g) self raising flour
½ teaspoon salt
2 eggs, lightly beaten
50g dark chocolate, melted
50g white chocolate, melted
Method
- Pre-heat oven to 180C (160°C fan-forced) and line the base and sides of a 20cm x 20cm baking dish with baking paper.
- Melt butter, chocolate, brown sugar and honey in a medium saucepan over medium heat, stirring until smooth. Remove from heat, add vanilla, flour, salt and eggs and mix with a wooden spoon until combined. Pour into prepared tin and bake for 30 minutes or until just firm.  Cool on a wire rack.
- Cut the blondies into bars, place on a serving platter and drizzle with dark chocolate and white chocolate. Leave to set for a few minutes before serving.
