Orange Bread & Butter Pudding

Fans of the English TV series Pie in the Sky will know why I’ve developed this recipe for Orange Bread & Butter Pudding. Policeman and chef Henry Crabbe hot on the tail of two thieving old ladies made sure he found out the secret ingredient of their bread & butter pudding before he nabbed them! I share my version of it with you.

Ingredients

  • 10 slices white bread, approximately
  • butter, softened
  • ¼ cup good-quality orange marmalade
  • 2 eggs
  • 2 tablespoons vanilla sugar
  • 1 cup (250 ml/8 fl oz) cream
  • 1 cup (250 ml/8 fl oz) milk
  • ¼ cup sultanas

Instructions

  1. Preheat the oven to 190°C (375°F, Gas Mark 5).
  2. Cut the crusts from the bread. Spread with the butter and marmalade. Cut in half diagonally and place in a flat dish or tray.
  3. Whisk together the eggs, vanilla sugar, cream and milk. Pour over bread and soak for 5–10 mins but not so long the bread starts to fall apart.
  4. Arrange bread decoratively in a greased oven-proof dish, overlapping the slices.
  5. Sprinkle with sultanas. Pour over remaining custard mixture.
  6. Bake in the oven for 30–35 minutes, reducing the heat or covering with foil if the top becomes too brown.
  7. Serve cut in wedges with thick cream.

Notes

Lyndey’s Note: If you stand the bread slices upwards as pictured soak the bread well and then spoon or brush some of the custard mixture over the bread which is elevated above the mixture.

Wine: The rich orange fruit flavours of a botrytis semillon will fit best here, finding similar notes in the orange marmalade.
