Oysters with Pico de Gallo

Preparation Time: 10 minutes

Ingredients:
2 small Roma tomato, peeled, seeded, diced
1 small red onion, finely chopped
1 green jalapeño chilli, seeded and finely chopped
1 lime, zest grated, juiced
? cup finely chopped coriander leaves
Salt flakes, to taste
24 freshly shucked oysters on the shell

  1. Combine tomato, onion, jalapeño, lime zest and juice, coriander and salt; mix well.
  2. Spoon over oysters and serve.
