Oysters with Pico de Gallo

Ingredients

  • 2 small Roma tomato, peeled, seeded, diced
  • 1 small red onion, finely chopped
  • 1 green jalapeño chilli, seeded and finely chopped
  • 1 lime, zest grated, juiced
  • 1/2 cup finely chopped coriander leaves
  • Salt flakes, to taste
  • 24 freshly shucked oysters on the shell

Instructions

  1. Combine tomato, onion, jalapeño, lime zest and juice, coriander and salt; mix well.
  2. Spoon over oysters and serve.
