Roasted Brussels Sprouts

These roasted brussels sprouts are crisp and golden on the outside, and tender on the inside.

Ingredients

  • 250g Brussels sprouts
  • 1 tablespoon (20 ml) extra-virgin olive oil
  • Sea salt and freshly ground black pepper
  • 1 – 2 tablespoons grated parmesan or pecorino cheese

Instructions

  1. Preheat the oven to 200C’. Line a baking tray with baking paper.
  2. Trim the ends and remove any discoloured or damaged leaves from brussels sprouts. Cut each sprout in half.
  3. Place sprouts on baking tray, then drizzle over oil and sprinkle with salt. Toss to coat. Turn sprouts over so flat side is down on the baking paper.
  4. Roast the sprouts until they are tender and caramelised on the edges, about 20 – 25 minutes.
  5. Place in warm serving bowl, sprinkle with cheese and serve immediately.
