Roasted Oranges with Thyme & Vanilla

Much as oranges in season are glorious on their own, Roasted Oranges with thyme & Vanilla take them to another level. Perfect for dessert or breakfast.

Ingredients

  • 4 oranges
  • ½ teaspoon good quality vanilla bean paste
  • 1 tablespoon honey or agave syrup
  • 6 springs fresh thyme (or 1 sprig rosemary)
  • To serve: Greek yoghurt and/or muesli

Instructions

  1. Pre-heat oven to 180’C (160’C fan-forced). Line a medium baking dish with foil, then baking paper.
  2. Peel oranges, removing the white pith too. Slice thickly into 1 ½ – 2cm slices. Place onto the baking paper
  3. Sprinkle with vanilla, honey and poke thyme sprigs in. Toss to combine and fold over the baking paper and foil to wrap into a parcel.
  4. Roast for 20 – 25 minutes or until fragrant. Remove and empty oranges and juices into a serving bowl.
  5. Serve warm as dessert with Greek yoghurt or cold for breakfast with muesli. Leftovers can be stored in the fridge make a divine accompaniment to good quality vanilla ice cream.

Notes

Wine: If serving as a dessert go for a botrytis semillon or riesling
